Chocolate Velvet Cupcakes

Author: Lu

These rich, tender chocolate cupcakes have a deep cocoa flavor and a soft, moist crumb. The simple batter comes together easily with a mixer, and piping it into the cupcake liners makes it easy to portion the cupcakes evenly. They are delicious plain or can be finished with your favorite frosting.

Ingredients:

• sugar   300 g
• salt   1/8 teaspoon
• butter   110 g
• All-purpose flour   185 g
• baking powder   1 1/2 teaspoons
• milk   1 cup (240 ml)
• eggs   2
• baking soda   1/4 teaspoon
• cocoa powder   65 g
• vanillin   1 G

1. Remove the butter from the refrigerator in advance and allow it to soften at room temperature. It should be soft enough to press easily with a finger but not melted.

2. Preheat the oven to 365°F (175°C).

3. Line a 12-cup muffin pan with paper cupcake liners.

4. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and baking powder until evenly combined.

5. In a large mixing bowl, combine the softened butter and sugar.

6. Beat with a mixer for 2–3 minutes, until the mixture becomes lighter and creamy.

7. Add the eggs one at a time, beating well after each addition.

8. Add the salt and vanillin and beat briefly on high speed until well combined.

9. Reduce the mixer speed to low.

10. Add the dry ingredients in several additions, alternating with the milk. Begin and finish with the dry ingredients, mixing only until the batter is smooth after each addition.

11. Do not overmix the batter once the flour has been added.

12. Transfer the batter to a piping bag. This makes it easier to fill the cupcake liners evenly, but a spoon or cookie scoop can also be used.

13. Fill each cupcake liner about two-thirds full.

14. Bake in the preheated oven for approximately 20 minutes.

15. Check the cupcakes with a wooden skewer inserted into the center. If it comes out clean or with a few moist crumbs, the cupcakes are ready.

16. Remove the pan from the oven and let the cupcakes cool in the pan for 5 minutes.

17. Transfer the cupcakes to a wire rack and allow them to cool completely before frosting or serving.

SERVING IDEAS:

- Frost with chocolate buttercream or chocolate ganache.

- Top with vanilla or cream cheese frosting.

- Dust lightly with powdered sugar for a simple finish.

- Serve with fresh strawberries, raspberries, or cherries.

- Add a small scoop of vanilla ice cream for a simple chocolate dessert.

TIPS & VARIATIONS:

- Make sure the butter is softened but not melted. Properly softened butter gives the cupcakes a lighter texture.

- Measure the flour and cocoa powder carefully. Too much flour can make the cupcakes dense.

- Once the flour is added, mix only until the batter is smooth. Overmixing can make the cupcakes less tender.

- Filling the liners about two-thirds full gives the cupcakes enough room to rise without overflowing.

- If you want to frost the cupcakes, allow them to cool completely first.

- For an extra chocolate flavor, add chocolate chips or finely chopped chocolate to the batter.

- The cupcakes can be frozen without frosting. Wrap them well and thaw at room temperature before decorating.
