The filling can be very different. Options: boiled eggs, fried mushrooms and greens; fried mince with parsley and green onions; and so on… Mold size 29 x 23 x 4 cm (11.4 x 9 x 1.6 in).
Ingredients:
• salt | 1/2 teaspoon |
• flour | 1 cup |
• baking powder | 1 teaspoon |
• olive oil | 1 1/2 tablespoons |
• eggs | 3 |
• mayonnaise | 3 tablespoons |
• green onions | 1 bunch |
• plain yogurt | 1/2 cup |
• canned tuna | 2 (10 oz / 284 g) |
• boiled eggs | 3 |
• greens | 1 bunch |
• spices | to taste |
1. Hard boil eggs and let cool.
2. Preheat oven to 395F.
DOUGH
3. In a medium bowl, whisk together flour and baking powder.
4. In a large bowl: beat eggs with a fork. Add mayonnaise and yogurt. Mix together. Add salt, flour and baking powder. Mix together. Add 1 tablespoon olive oil and mix together. Cover bowl with batter and set aside. (The batter should not be thick, like thick pancakes. If the batter is thick, add more yogurt.)
FILLING
5. Drain canned tuna. In a medium bowl: Mash the tuna into small pieces.
6. Finely chop herbs and green onions. Add to tuna. Peel the boiled eggs, cut into cubes and add to the bowl with the tuna. Add spices and salt to taste. If the tuna was in water, add 1 teaspoon of olive oil. If the tuna was in oil, then do not add olive oil. Mix everything well.
ASSEMBLY
7. Line a baking sheet pan with parchment paper. Pour half of the dough into the pan. Spread it evenly over the surface of the baking sheet pan with a spatula. Put the filling on top. Spread it evenly. Put the second half of the dough on top. Spread it evenly. Sprinkle poppy seeds or sesame seeds on top. Bake until light golden brown, about 30-40 minutes (depending on your oven).
